CILANTRO STEAK TACOS FOR CINCO DE MAYO Posted on May 2, 201724 Comments



That’s right, I want steak tacos. Cinco De Mayo is the perfect excuse to cook up some fresh mex.  I have been obsessed with fragrant fresh cilantro. Cilantro and lime just makes any piece of meat delicious. A marinated flank steak would definitely be a good place to start for my steak taco.

Who does not love a Mexican meal with fresh veggies accentuating a beautiful flank steak. Oh yeah, I am ready to celebrate Cinco De Mayo with a loaded steak taco and a glass of wine (okay, you might want a margarita). So, I think a fresh marinade for the steak and homemade salsa/pica de gallo will definitely tame my craving for yummy Latin American feast.




You cannot beat fresh cilantro for a steak marinade. The aroma from the chopped up ingredients is unbelievable. Cilantro and garlic, I am in heaven.


1 Cup Finely Chopped Cilantro

6 Cloves of Garlic Crushed

Juice from 2 Limes

2 TB Chives

1 TB Salt

1/2 TB Pepper

2 TB Olive Oil

 Flank Steak (1 1/2 to 2 pounds)


In a plastic bowl that has a lid, mix cilantro, garlic, lime juice, chives, salt, pepper, and olive oil. Remove about 1/2 cup of marinade and set aside. Place steak inside bowl and coat with marinade. Let steak marinade for at least an hour up to 24 hours. Remove steak and cook on grill, using the marinade set aside to baste the steak as it cooks. We cook ours to medium rare (slightly pink in center). Take off grill and allow to rest at least 15 minutes. Slice in 1/2 inc pieces against the grain.


Why would you do salsa from a jar when it takes just a few minutes to cut up the veggies for fresh pico de gallo? This is definitely the perfect condiment for my steak tacos. My mouth is watering just thinking about the combination.


3 Tomatoes Seeded and Chopped

1 Sweet Onion Chopped

3 Jalapenos Seeded and Chopped

3 Clove of Garlic Crushed

2 TB Dried Cilantro

1 TB Red Wine Vinegar

1/4 Cup Olive Oil

2 TB Salt

2 TSP Pepper


In a bowl, mix all ingredients. Cover and allow to sit in refrigerator for at least an hour. If your allow to marinade longer the flavors will be brighter and more developed. Use as a topping for steak tacos.


Everything is ready. Time to grill up the soft tacos, saute the onions and peppers, and gather the rest of your toppings. We like a little sour cream and cheese to top off our tacos.  Bacon definitely makes everything better.  One big pan of crispy bacon has to be included in our spread. A crispy, herb, tomato, bacon  bite of heaven. This is just as good as any taco I have ever ordered from a restaurant. The only thing that could make it better is a fruity glass of Moscato Wine. Okay, okay it is Cinco De Mayo you can have a Margarita. From this GA girl to all of you, Feliz Cinco De Mayo Y’all!!!!!



  1. We have this all the time through out the year. Wonderful use of a flank steak. We sometimes change up the sauce we put on the steak depending on what we are serving. Always a crowd pleaser.

  7. The cilantro steak tacos sound amazing for Cinco De Mayo. We love love steak and tacos in my home so this is something we are going to have to try making. The pico de gallo sounds delicious too.
