MADDIE BAKES IS JOINING THE BLOG
I am so excited!!!For years I have encouraged my daughters to be part of my blog, but they have always turned down the invitation. They were either too busy, lazy or just plain uninterested. So, you can only imagine my excitement when my youngest daughter came to me with an interest in doing a feature on our blog. Happy dance!!!! She’s been baking a lot lately and wants to share her new found love with my readers. My whole family enjoys all the delicious baked goods that Mads (my pet name for her that she hates) has been cooking lately. But, before we dive right into her new weekly feature ,MADDIE BAKES, with her yummy Cranberry Walnut Bread, I want to introduce you to my baby girl.
Maddie Jane Ebner is the youngest of our three children. She was born in Orlando, Florida in 2000 (my millennial baby). Mads was always my girly girl. She loved Barbie, My Little Pony, and tea parties with her daddy. As she entered elementary school, Maddie became very interested in competitive cheer. She and her sister, Becca, spent many hours in the gym. My little dare devil became quite a good flyer (the one they throw in the air). Before she was in middle school she was a featured flyer on a very advanced team. However, with the start of high school and advanced classes cheerleading became part of her past. Enter high school and culinary class. She really enjoys being in the kitchen. Initially culinary was just a easy class to pad her very full schedule, but she has fallen in love with all things cooking, especially baking.
CRANBERRIES ARE HER FAVORITE
That leads us to the here and now with MADDIE BAKES. My sweet girl will be letting you into her kitchen and bringing you her favorite recipes. To start off this series she has chosen a recipe with one of her favorite fruits, the cranberry. I buy them fresh during the holidays and Maddie will eat them straight from the bag until they are gone. This year, due to some amazing coupon finds, my kitchen has been overflowing with dried cranberries. We also ended up with a good amount of cranberry goat cheese, another coupon find. My little chef wandered into the kitchen one day, opened one of my cookbooks and modified the recipe to her taste with her dried cranberries and cranberry goat cheese. And so, Maddie’s Cranberry Walnut Bread was created. So, I hope you enjoy her recipe as much as we do.
CRANBERRY WALNUT BREAD
2 cups flour
1 cup sugar
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
3/4 cup orange juice
1 tablespoon grated orange peel
2 oz cranberry goat cheese (regular goat cheese will work too)
1 1/2 cups dried cranberries
1/2 cup chopped walnuts
Pre-heat oven to 350 degrees. Grease a 9×5 inch loaf pan. In a large mixing bowl combine flour, sugar, baking powder, salt, and baking soda. In a mixer cream goat cheese and eggs. Stir in orange juice and orange peel. Combine wet ingredients with dry ingredients. Mix until all ingredients are combined, but avoid over mixing. Stir in cranberries and walnuts. Spread batter evenly in loaf pan. Bake for 50 minutes, use the toothpick test to check the middle of bread. Remove from pan and cool on baking rack. Slice and serve. Place any leftovers in airtight plastic container for freshness.
Maddie made a double batch of her dough and tried baking them as muffins. They turned out awesome. She used large size muffin tins and baked for 22 minutes. They were great with our morning coffee.
Maddie also made a glaze of powdered sugar, OJ, and orange peel that she drizzled on top. It gave the bread a little spark of sweetness.
