CITRUS PANCAKES THAT RISE AND SHINE

Citrus pancakes, sounds good to me. I am a FL native, granddaughter to a citrus farmer. So, it seems perfectly natural to me to add a little fruity flavor to our pancakes. My uncle came for a visit earlier this month and brought some fresh Honey Bell Oranges. These would make the perfect fresh ingredient for my delicious pancakes. Then I started thinking about a balance of the sweetness with a little lemon. Oh yeah, I needed to make this pancake.

A SUCCESSFUL PANCAKE AND SYRUP COMBO

I wanted to make the cakes a little different, less fluffy more dense. More like a crepe, but not quite as thin. I love to experiment with my recipes. I think I came up with a winner. However, there was a matter of a syrup. I did not think maple would do.  A corn syrup base with a punch of orange flavor. This combo is amazing. All you have to do is add a side of sausage and you have the perfect morning meal.

CITRUS CREPE STYLE PANCAKE WITH ORANGE SYRUP

INGREDIENTS

PANCAKES

4 CUPS SIFTED PANCAKE MIX

1 TSP SALT

1/2 TB VANILLA EXTRACT

1 TB VEGETABLE OIL

1 TSP FINELY CHOPPED ORANGE ZEST

1/2 TSP FINELY CHOPPED LEMON ZEST

1 CUP FRESH SQUEEZED ORANGE JUICE

1/4 CUP FRESH SQUEEZED LEMON JUICE

1/2 CUP HALF AND HALF

1 CUP OF BUTTERMILK

1/4 CUP SOUR CREAM

1/2 CUP VANILLA YOGURT

BUTTER FOR GRIDDLE

SYRUP

1 CUP CORN SYRUP

1/4 CUP FRESH SQUEEZED ORANGE JUICE

1 TSP FINELY CHOPPED ORANGE ZEST

INSTRUCTION

PANCAKES

In a large mixing bowl combine the sifted pancakes mix and salt. In another bowl combine vegetable oil, orange zest, lemon zest, orange juice, lemon juice, half and half, and butter milk and stir until all ingredients are combined. Stir in yogurt and sour cream into wet mixture. Make a well in the baking mix/salt mixture and add wet mixture. Using a whisk, mix all ingredients until batter is smooth.

Pre-heat griddle to 350 degrees. Place small pats of butter on griddle to melt. Using a ladle, spoon 1/2 cup portions of  mixture onto griddle. When pancake batter starts to form bubbles flip (about 5 minutes). Cook on second side for about 3 minutes. Serve warm drizzled with Orange Syrup. Makes 16 medium pancakes.

SYRUP

Combine zest, orange juice and syrup in sauce pan. Bring mixture to a boil and allow to simmer for 5 minutes. Serve warm over pancakes. Store any left overs in sealed container in fridge.

  3. I love crepes. I could eat them for breakfast, lunch and dinner. I wish I was better at making them myself though. I’m not much of a cook.
