Summers make me so nostalgic. Best summer memory: eating a parfait after church from Mr.Swiss. There is nothing like it. Oh to be 10 years old with no cares, chowing down on some amazing ice cream. I have not thought about a Mr. Swiss parfait in the longest time. Now I really need to find me one, and Mr. Swiss is no longer in existence.

You know me, I am up to a recipe challenge. My memory may be a little fuzzy, but I do remember strawberries, crumbled cookies, and delicious ice cream. It is summer so, I want to put my own little fresh spin on a parfait.  I was also feeling a little patriotic, and wanted to put a red, white, and blue flare to my creation.

My girls are berry maniacs. So, I thought maybe some blueberries, and strawberries. We are off to a good start. How about some sugar cookie crumbles. Maybe I should put the berries in ice cream.  Let’s see maybe a blueberry sauce, y’all know I can make some good blueberry sauce.

All of us girls got in the kitchen and started experimenting. My Maddie is the ice cream queen. She came up with a killer strawberry ice cream recipe. After lots of tasting and some lack luster attempt, we came up with a keeper. Here is my DOUBLE BERRY PARFAIT PERFECTION.

Double Berry Parfait Perfection

INGREDIENTS

Strawberry Ice Cream

Blueberry Sauce

Sugar Cookies (crushed)

Fresh Whipped Cream

INSTRUCTIONS

In a small glass (I used a small canning jar) place 2 TB of sugar cook crumbles. The next layer is a scoop of strawberry ice cream, and then drizzle with blueberry sauce. Continue with another 2 TB layer of cookie crumbles and ice cream and sauce. Depending on the the size of your ice cream scoops, you should have two to three layers. When you reach the top of your glass, put a large dollop of fresh whipped cream and drizzle with blueberry sauce. Serve immediately.

I got a little fancy . Maddie made some star shaped cookies and covered them with colored frosting and that was my garnish.

It was not quite my “Mr. Swiss” summer parfait memory, but it was still very delicious.

  2. Girl, I was drooling before I even scrolled! These are beautiful. I just went blackberry and blueberry picking, so I may sub out the blackberries for the strawberries. SOOO making these this weekend! LOVE! (Pinning)!

  4. I don’t have any major memories from Summer that involve food really. This is something I would love to make as a memory making moment with my current family unit though. It looks so delicious and refreshing!

  5. Parfaits are so easy to make but forever delicious! I could sneak one in my daily diet and be fine with it. lol

  6. These parfaits look amazing! I’ve never heard of Mr. Swiss but if their parfaits were anything like this it looks like I was missing out.
