I am really good at making sweets for breakfast. In my recipe box there are many variations of pancakes, french toast, muffins, and doughnuts. You might say I have a bit of a sweet tooth. Although my family loves my pastries, they are also big time carnivores. They need meat with every meal, and breakfast is not exception.
I am not a big fan of just frying up a slab of meat and throwing it on the table. I like to get creative. My aunt makes sausage balls for our holiday events that are pretty good, but I played around with the recipe on morning and my family said, “Write that one down.” So I did.
Now at every holiday breakfast my crew expects a plate full of sausage balls. Father’s Day is Sunday, and that is definitely a holiday worth a big breakfast. I thought it would be nice to share this with all of you. I hope your family enjoys it as much as mine.
FATHER’S DAY BREAKFAST SAUSAGE BALLS
2 pounds of pork breakfast sausage
1 cup baking mix
2 cups sharp cheddar cheese, shredded
2 TB seasoned salt
In a large mixing ball combine sausage, sifted baking mix, and cheese. Mix together until all ingredient combine together.(It works best to knead the ingredients together with your hands.) Once all ingredient are combined, begin portioning into two inches rounds and roll them into a circle.
Place seasoned salt into small bowl. Lightly roll ball in salt and begin rolling again until the diameter is evenly covered with the salt. Place sausage ball on a foil lined cookie sheet that has been sprayed with non-stick spray.(Do not over crowd, make sure to give each sausage ball plenty of room on sheet. I placed them three in a row with five rows)
Put the tray in a 350 degree preheated oven. Allow to bake for 30 minutes. Remove from pan and serve hot.
These sausage balls are a perfect partner for our Berry French Toast. The sweet and the savory work so well together. I am sure your Dad will love them as much as ours.
